Healthy desserts are the best, because they are indulgent, delicious and you feel 100% good about eating them. I imagine all desserts fell into this category at one time, long ago, before foods became processed (think white sugar) or adulterated (chemical colorings and flavors) or treated with solvents and pesticides (think wheat).
With a clean, healthy dessert, there is not parental guilt or shame of a “cheat day” (I hate that term, by the way. We should never “cheat” ourselves, only make exceptions to our own rules with full will).
Guiltless Key Lime Mousse Recipe
- 6 ripe avocados
- 1 tablespoon raw honey
- Juice of 2 limes
- Pinch of raw vanilla bean or 1 tsp real vanilla extract
- 2 cups raw walnuts
Mash the avocados in a mixing bowl. This is a great opportunity to pull out our favorite kitchen gadget, an old fashioned ricer.
Add vanilla and raw honey.
Stir in lime juice. You need to adjust amount for taste, as some limes are juicier than others.
Use an immersion blender for an extra silky texture.
Add a few spoonfuls of walnuts to the bottom of each parfait glass before adding in the key lime mousse.
Beware! You might just eat it all straight from the bowl before it makes it to the serving dishes, and you don’t need to feel guilty about that one bit!
