Persimmons are in season now! My favorite, Hachiya persimmons are more conical in shape than the Fuyu. So delicious and nutritious they are best eaten when very, very ripe and have the consistency of a water balloon. Fuyus are eaten firm, like an apple. Hachiya persimmons are sometimes called, “Candy FullSizeRenderof the Gods” because they are so sweet! Persimmons contain very high amounts of vitamin C as well as vitamins A, lycopene, and lutein, all know for their anti-aging properties. They also contain betulinic acid, a known an anti-tumor compound. You can scoop out the flesh and eat them like a sweet pudding, or make this super easy smoothie.

Recipe:

  • Flesh of one ripe Fuyu Persimmon
  • 1 scoop of collagen protein
  • 1/2 cup water
  • Juice of one tangerine
  • 4 ice cubes

That’s it! Blend until smooth and enjoy the exotic sweet flavor and the numerous health benefits.
