If you, like me, had leftover baked pumpkin from making pumpkin pie, this is a super easy and healthy smoothie for breakfast for the kids or after a workout. If you don’t have leftover baked pumpkin, leftover canned pumpkin will work also. Pumpkins are very high in vitamins A and C, and alpha and beta carotene which are so good for skin and eyesight. Recipe:

  • 1/2 Cup pumpkin puree
  • Liquid: 2 cups favorite milk or nut milk (I prefer raw cow or goat milk)
  • Protein: 1 pastured egg OR 1 scoop Whey or Hemp protein
  • 1/2 tsp cinnamon, pinch of nutmeg, pinch of clove OR 1/2 tsp pumpkin pie spice
  • 4 ice cubes

Simply blend together and top with raw unsweetened whipped cream or whipped coconut cream.
