Back to school & back in the kitchen! ?? Lunch today: Carrot Coconut Curry with Crispy Tofu! Based off of @sobremesa_amy’s recipe with some modifications – oh so delicious!! 1 serving = 633 calories, 22g protein, 79g carbs, 26g fat, 8g fiber & >400% of the Daily Value for Vitamin A! Worried about the fat content? One way to reduce it is to use light coconut milk (I used full fat in this version).

5. Veggie Omelette

Veggie packed omelettata before work ? fluffy doesn’t even begin to describe it Directions • sauté red & green bell peppers + quartered Brussels sprouts + zucchini + red onion + mushroom + minced garlic + olive oil in pan for 5-7 minutes. Spray or add a touch more oil and stir veggies. Whisk 2 whole organic eggs + 1 egg white + chopped cilantro + chopped green onion + ground pepper & pour over the top the veggie mixture, making sure to cover the entire pan. Let cook on medium for about 3 minutes then pop in the oven on broil to finish cooking the top {about 3 more minutes or until cooked through}. Top with red pepper flakes & side of avo & Roma tomato ?✨

20 Jan 2016 Snowy today’s bento. Rice balls , Left side is mixed rice with seri and white chicken,anothers are salty. Grilled salmon . Simmered taro with Japanese-style broth and plum paste. Miso picked carrot and white radish. Boiled spinach and sautéed mushrooms marinated with soy source and broth and Yuzu juice. 11. White Bean, Chicken, and Quinoa Chili

A bit delayed since its been so crazy recently but here is #whatsonmyplate for @tanlines_for_life_bbg @the_joy_of_alyssa and @glutenfree_fitgirl_foodie last night when I couldn’t bear I made this white bean, quinoa, chicken white chili. 13. Stuffed Sweet Potato

?Here a one of my favorites ? Chili-Stuffed Sweet Potato ? Ingredients ?? 1 tbsp chili seasoning blend (low sodium) Chipotle seasoning blend (low sodium) Sweet potatoe ¾ roma tomato or one can of of dice tomatoes ⅛ cup green onion or white onion 6 oz lean ground turkey ⅛ cup can black beans or any other beans. I used kidney beans (low sodium ) Any herbs for garnish, cilantro, spinach In a pan cook meat with seasoning blend Let it cook then add beans, tomatoes and onions. Place your sweet potato on the oven or microwave let it cook. Open sweet potato and poor the chili mix and garnish with herbs ? 18. Roasted Chickpeas and Veggies

I love my oven ? making these yummy veggies and chickpeas. Also there is no risk losing some beneficial nutrients and enzymes in veggies. And it doesn’t take long to prepare :).
